Estate profile /
The processing plant is located on the banks of the Mora mora River in southern Ethiopia, hence the name.
Because coffee was grown late in this area, the soil is fertile, and the altitude is slightly higher than that of the general Ethiopian producing areas, creating a good flavor.
In terms of treatment methods, water will be used for preliminary screening of defects before sun exposure; in the first stage of sun exposure, no sunlight is used, but an electric fan is used to dry with cold air, and in the second stage, sunlight is received on the African scaffolding, and firewood is used at night. The kiln controls the humidity, so that this bean not only has a sun-dried fruit flavor, but also has a lively acidity and a delicate layering like a wash.
