Passion Honey
The black honey processed by honey has evolved again, that is, the processing of passion honey. Honey treatment is to remove the peel and pulp, and keep the pectin exposed to the sun. Honey means very viscous pectin like honey. With the degree of pectin retention, the flavor intensity of the honey treatment will vary, and the risk of good fermentation will also increase. Not satisfied with the current honey processing, the Rivas processing plant in Costa Rica has developed a more evolved processing method "Passion Honey Processing". 80% of the pectin is retained for drying. Unlike the black honey treatment, more sweetness and fruit flavors in the pectin are brought into the green beans, so the drying time is extended, more than three weeks to one month, so It tested the control of the drying process, including humidity, temperature, convection, etc. On the green bean drying bed, a large number of manual turning and removal of defective beans were relied on every day, and the whole process was carried out in a lower temperature environment. Such honey-processed coffee will have a strong tropical fruit tone, so it is named "passion honey process".

Finca Vista al Chirripo is located in the remote coffee-producing area of ​​beautiful Branca. It started coffee cultivation 30 years ago and has its own Rivas processing plant (Vista Al Chirripo), located by altitude It is divided into five coffee estates from the Slope Area, including the well-known Treasure Manor, which are all owned by the Régulo family. The altitude of Chiribou View Estate is the highest among these five estates, at 1780 meters.
